Chef Mitsuhisa Nishio, or “Michu” to his family members and friends, is the son of the first generation of Japanese people whom immigrated to the Dominican Republic.

Michu has been interested in cooking since a young age. As a child, he learned about Japanese food from his parents since they worked in agriculture and he helped his mother in the kitchen.

His cooking is based on the fusion of Caribbean cuisine and traditional Japanese food.
